Belly Wine Experiment is a fresh project headed by two young winemakers in Auvergne, France. Crac Petillant Gris 2021 is a true feat of winemaking innovation. Persephone Rouge Deux 2021 is made from free-run Gamay juice with a small splash of direct-press Pinot Gris and bottled under crown cap. Chipper, energetic red. Sour cherry, cranberry through to its dry, chalky conclusion, rose water, sage and bay leaf herbal notes. Level and even in the palate. This feels distinct, very serious, beautiful to drink. Prémices is serious, great Beaujo. Train tracks of acidity, with a brush stroke of tannin that ripples along in dark cherry fruitiness, some hazelnut and anise in the way, fennel notes and a juiciness despite the crispness and laidback powdery pucker going on. A triumph of deliciousness, so appealing and accessible yet with structure to boot. Kudos. Romuald Valot’s Chirobules is all about the art of patience. Its rich, deep flavors of black currant and vanilla are the result of years of careful aging in oak barrels.
