Train tracks of acidity, with a brush stroke of tannin that ripples along in dark cherry fruitiness, some hazelnut and anise in the way, fennel notes and a juiciness despite the crispness and laidback powdery pucker going on. A triumph of deliciousness, so appealing and accessible yet with structure to boot. Kudos. Romuald Valot’s Chirobules is all about the art of patience. Its rich, deep flavors of black currant and vanilla are the result of years of careful aging in oak barrels.
