Unico Zelo and Applewood Distillery, located in Gumeracha, Adelaide Hills, have gained ground-breaking status due to the efforts of Brendan and Laura Carter (and Noah Ward, who does an excellent job at creating excellent brand awareness). The team has worked with both local and sourced grapes to redefine the potential for new varieties, even in overlooked locations. By producing single-site bottlings, they have raised the bar in terms of flavor and structure, while their entry-level offerings retain vibrant drinkability.

Jungle Jungle 2022
Dolcetto from Clare Valley and Langhorne, from shale and blue slate soils. This is the undefeated champion of pizza wine. Plum, blueberry, liquorice, spice, mint and dried roses. This is light, but firm. Acidity is zippy and finish is dangerously juicy. Finishes with sour cherry, unripe plum and hints of almond paste.
Pollen 2023
Don't expect any sweetness here, it's bone dry, and due to some slight early picking, a touch of refreshing acidity, bursting with potpourri, ginger and kaffir lime aromatics, a gorgeous chalky texture, riddled with golden apples, white peach and pineapple. Perfectly paired with plastic chairs in a bustling alley, armed with chopsticks and lotus soup spoons.
Troppo 2022
Troppo proudly showcases an abundant display of luscious blue fruit, elegantly balanced in this Syrah. Delighting the senses, it presents a blast of herbal nuance and olive tapenade, a characteristic trait of this grape. Meticulously crafted, the tannins have been artfully restrained to maintain a refreshing cool climate profile.
Delta Blue 2022
Delta Blue is a blend of Touriga Nacional, Cabernet Franc and Cabernet Sauvignon. With that in mind, do not expect this to be a big old bold wine with a body like a semi-trailer - this is still a classic Unico Zelo wine with freshness, and that juicy core, but backed up by a lovely, subtle suede tannin. Big blueberry, raspberry, and blackcurrant vibes.
Sea Foam 2023
Sea Foam is as salty yet refreshing as ever made from 100% Vermentino. Notes of nashi pear, green apple, nectarine, frangipani, and a whiff of grassy freshness. Sea Foam is as close to the pure distillation of spring that Unico has ever released. Vibrant style, crunchy and vigorous in bubbles, mouthwatering finish. Brilliant.
Fresh AF 2023
The insane water-efficiency of Nero d’Avola coupled with no additions in the vineyard or winery (except for a small component of SO2 at bottling) displays the potential for this variety to craft succulent, juicy, aromatic and supremely refreshing wine. A touch of ancient vine Zibibbo lifts the aroma into supreme smashability.
