If you think of how far winemaking has come, it’s truly fascinating to be able to drink wines from countries that have been producing wine for 8000 years and from those that just started 10 years ago. If you live in a place that’s considered a ‘strong market’, you literally have endless access to all these wines. It’d be a shame not to use it in your advantage. Haruyuki Yano – Haru moved to Yamagata from Kobe with no experience in the wine industry just to roll the dice on the potential of Japanese wine. We’re glad he did.

Aromatico Frizzante 2021
The grapes for this blend hail exclusively from Nanyo, Yamagata. Niagara, Rosario Bianco, Neo Muscat, Shine Muscat, and directly pressed Delaware, with a 12-hour skin contact. Fermented in stainless steel vats, it is subsequently bottled with 12g/L of residual sugar, resulting in a delicately effervescent effect. This wine is truly aromatic, offering a refreshingly crisp experience.
Bianco 2021
Delicate Delaware grapes, having undergone a 24-hour skin contact, are destemmed and blended with Niagara and Delaware grapes with a 12-hour skin contact. The fermentation and aging take place in stainless steel vats, extending for a duration of 7 months. This wine is crafted with wild yeast, remains unfined and unfiltered, and contains no additives.
Arancione 2021
Here Delaware undergoes maceration in amphora for 10-13 days. Then it’s blended with Steuben, Neo Muscat, and Merlot, each with 12 hours of skin contact. A 10% portion undergoes whole-bunch maceration. Half of the blend ages in amphora, while the remainder matures in stainless steel vats. Textural, lively, delicious.
Rosato 2021
A delightful rosé crafted by blending directly pressed Steuben and Delaware, along with 6 days of skin-fermented Steuben. A touch of Niagara is then introduced, resulting in a charming, fresh, and fruity rosé. Red fruit, spice, subtle basil as well. It’s a wine of texture, with an explosion of raspberry, strawberry and watermelon sorbet on the palate. A pleasing juiciness, bright finish.
Rosso 2021
This blend is crafted from co-fermented Steuben (71%) and Niagara (10%), each spending eight days on skins. It is then combined with a co-ferment of Steuben and Delaware (29%), with a six-day skin contact. After a brief maturation in stainless steel, the wine is bottled, boasting a 10.5% alcohol. Juicy on the palate, nice slosh and light crunch, thirst-quenching style.
Rosso Anfora 2021
Sourced from Yamagata and Yamanashi Prefectures, the grapes undergo diverse vinification processes in amphoras, with all varieties being destemmed. The resulting wines are then blended in the summer of 2022. Aged for 8 months in amphoras, this wine is crafted with wild yeast, remains unfined and unfiltered, and contains no additives.
