Essentielle is a Champagne that needs about 30 minutes of air to really show its character (just nice while you have the eggs going on the stove). Extremely focused Pinot Noir, with a slightly oxidative and tart pear/green fruit profile.
Another Champagne that needs to be taken for a test drive is Boulard’s Rosé de Saignee. Rather light structure on the palate with a clear and persistent zingy acid.
Next in line is Catalunya’s Cava made from 100% Xarel-lo (grape used in the majority of Cava on the market). Fizz here is subtle, drinks almost like a dessert wine, but one that is FREEESH. Henri Milan’s pet nat could be the most serious one we have in our portfolio, while Borachio’s Pash Rash is just full of fun all the way through.
Wrapping up with a pet nat from New Zealand, which usually finds itself in the more “food-friendly” category.
