Daniel Sage La Voix du Periscope 2020
This is a skin-contact Viognier coming from Ardeche legend Daniel Sage. Grapes are sourced from Vincent Fargier of Les Deux Terres, half of the mass sees maceration of about one month while the rest is direct-pressed. After elevage in old barrels, the wine is bottled with no fining, filtration or added SO2. Persimmon with burnt demerara sugar, candied ginger, turmeric and ripe apricots.
Grape Republic Rosato 2021
A delightful rosé crafted by blending directly pressed Steuben and Delaware, along with 6 days of skin-fermented Steuben. A touch of Niagara is then introduced, resulting in a charming, fresh, and fruity rosé. Red fruit, spice, subtle basil as well. It’s a wine of texture, with an explosion of raspberry, strawberry and watermelon sorbet on the palate. A pleasing juiciness, bright finish.

Dark crunchy fruit, black plums, bitter chewy skins, dark earth and beetroot juice ink, liquorice and violets. Really appetising vibrant perfume. Palate is quite light as opposed to colour and perfume. Lingering. Spicy finish. Savoury expression, very interesting. That chewy black fruit skin bitterness is a signature and grows on you with each sip.
