Theo Coles (sounds like a jazz artist) expresses place & grapes beautifully using principles of permaculture and regenerative agriculture and as a result creates wines full of life, character and purity. In 2012, Theo met Gareth Renowden, who owned a vineyard in Waipara Gorge, North Canterbury. On that tiny vineyard were 1000 Pinot Noir vines closely planted over limestone. Theo agreed to make some wines with Gareth - the first vintage of Hermit Ram being in 2012. Since then, Theo has expanded his range by sourcing fruit from tiny organically farmed vineyards throughout the Canterbury region, all tended by Theo himself.
