Even though biodynamics hit him 20 years after his first vine cuttings, Francis Boulard timely realised that there was no room for chemicals in his vineyard or winery. He officially started making wine on his own estate in 2009 from 2.75 hectares from a family vineyard Mailly-Champagne. His daughter Delphine was pursuing a career in interior design, but got bored pretty quickly and joined her father in his mission to make stellar Champagne. She follows her father's style, but prefers Burgundian barrels for aging over 500L demi-muids.
